Product application:
Carrageenan, a common food additive derived from red seaweed, is an odorless, tasteless, large (molecular weight of 100,000 Daltons or more), highly elastic molecule that curls around each other to form a double helix structure. Hydrophilic, viscous and stable, carrageenan dissolves in hot water at 80 degrees Celsius to form a viscous, transparent liquid and can form different forms of gels at room temperature. This has led to the widespread use of carrageenan as a thickener and stabilizer in the food industry and other industries.
